Means of verification:

Record of training implementation: attendance list identifying gender, theme exposed, material exposed, photographic record and certification given. It is verified that at least one of the persons in the area has received the training.

84. The plant uses signposting to promote its practices about hygiene and safety.

Means of verification:

Visual inspection of signposting with the following themes:

• Cleaning procedures.
• Food handling (hand washing, pollution by external agents).
• Wearing adequate work clothing: cap, protective footwear, apron, etc. without any accessories.

ACTION:

85. The plant establishes, implements, documents and keeps a safety and quality food system to protect the food supply from biological, chemical and physical dangers to avoid pollution.

Means of verification:

Documented plan of risk analysis for raw material, ingredients and packing material that has at least the following information:

• Determination of critical points of control.
• Establishment of critical limits.
• Establishing monitoring procedures.
• Establishing corrective measures.
• Establishing verification procedures that can be audited.

The plan must be checked at least once a year if changes occur in the product or the process.

ACTION:

86. The plant conducts internal audits to evaluate the level of compliance with its safety policy.

Means of verification:

Supporting document of internal audit that allows the verification of the level of compliance with the safety requirements demonstrating its capacity to comply with them through documented processes, control measures and results of its audits carried out at least once a year.
