70. The plant identifies and manages efficiently the main critical control points associated to the prune production. At least, one of the following must be considered:

• Identification of the product.
• Description of the product and its foreseen uses including validated processing directions.
• List of raw materials/ingredients.
• Inclusion of a flow diagram of the process (identifying the critical control points).
• Analysis of the dangers in raw materials, products and processes.
• Description of the objective and critical limits of critical control points.
• Description of the tracking and frequency of critical control points.
• Description of corrective actions for each critical control point.

Means of verification:

Protocol of quality control action carried out in the plant.

ACTION:

71. The plant establishes a quality management procedure when the raw material is received, during the stages of production and for the final product.

Means of verification:

Quality management protocol describing the processes carried out to meet security, legal and quality requirements and the requirements of future providers.

Management compromise through the signature of quality policy.

72. The plant has a quality management procedure known by the people working in it.

Means of verification:

Record of training implementation: attendance list identifying gender, theme exposed, material exposed, photographic record and certification given. It is verified that at least one of the persons in the area has received the training.

ACTION:

73. The plant establishes direct communication channels to receive and answer promptly the claims from customer and consumers.

Means of verification:

Record that shows communication channels with clients and consumers; it could be physical (packaging) or digital (web page) to send suggestions and claims.

74. The plant manages its internal audits based on the risks associated to assess the level of compliance of its quality management policy.

Means of verification:

Proof of internal audits that verifies that they comply with the requirements of the relevant certifications in due time.
